Wacky Cake (Or Cupcakes) Recipe - Yummy & Economical!


Just thought I'd share this recipe. It's economical and very versatile too. You can change flavorings any way you can think up. If you are adding apple or pumpkin puree, or mashed banana (something rather wet) you just reduce the water to 1/2 cup).

WACKY CAKE (OR CUPCAKES OR MUFFINS)

(Makes a lovely special occasion cake with whipped cream in the middle. Can be refrigerated without going dry, with plastic wrap on. A family favorite this one!)

1 1/3 cups flour

1/2 tsp salt

1/4 cup cocoa (for chocolate version)

1 1/2 tsp baking soda

1 cup packed brown sugar (or white)

1 cup water

1/3 cup oil

1 tbsp vinegar

1/2 tsp vanilla (if you have it!)

Mix dry ingredients in a bowl. Add wet ingredients and mix together gently until combined.

Pour into a greased and baking paper lined 8x8x2 pan (or into muffin/cupcake pan that is greased).

Bake @ 180C 20-30 minutes (or until skewer comes out clean). (About 15 minutes for cupcakes or muffins)

Banana Variation: Add about 1/2 cup mashed banana. Reduce water to 1/2 cup.
